We come in with a fairly low drum speed and airflow so as to not strip away too much of the nuance in the drying phasing as we allow heat to penetrate these big, dense beans. A median development allows for mild toasty notes and smooth mouthfeel while preserving that citrus acidity.

Coffee Origin Information:
The name Madremonte or “Mother Mountain” pays homage to the women who contributed to this coffee and a little bit of Colombian mythology. It is produced by various female farmers who are members of a special women's programme run by Coocentral (a co-operative in Central Huila) which aims towards improving the well-being of members and their families; as well as up-skilling farmers in order to help maximise the potential of their coffees.
